Someone I know has been grabbing items (video games, some pricey stuff) and putting them in a section of the store with no cameras, behind a bunch of items. He then comes back a few days later and steals them by taking them to the bathroom or just doing it right there.

No, just do it on the same day you see the shit.

There are better places than the toilets, and they have sensors at the toilet entrances (in the UK they do anyway); try photo booths, changing rooms etc.

But wouldn't this help reduce suspicion? If some security guards tackled you or something when you left, you wouldn't have anything on you and you could prove yourself innocent. So, if something went wrong, you would be able to prevent it. When you go a few days later, no cameras would have seen you get the item, and you could easily walk out without being suspicious.
