Meatloaf - Like a bat out of...
...The oven. It gets damn hot in there!
So I tried making some meatloaf this afternoon, came out ok. This is what I used:
1lb of lean ground round beef.
1/2 cup of BBQ Sauce (divided).
1/4 cup of chopped onions.
1/2 cup of dry Italian flavored bread crumbs.
2 large egg whites.
1/4 tbsp of chili pepper.
Mix it all, remaining sauce on top and bake for about 25 or so minutes. Was pretty tasty with some potaotes and broccolli. Does anyone else have some good Meatloaf recipes?

Mexican Meatloaf
1 lb. ground pork
1 lb. ground chuck
4 tbsp. Italian Bread crumbs
1/2 cup finely crushed Frito corn chips
1/2 cup thinly sliced green onions
2 cans Texas Pete Chile Sauce
1/4 cup chopped green peppers
1 egg
1-1/4 tsp. Mexican chili powder
3/4 tsp. salt
Freshly ground black pepper
Combine pork, beef, corn chips, green onions,can of chili sauce, egg, chili powder,bread crumbs, salt and pepper in medium bowl. Mix to blend well. Divide mixture in half. Shape each half into 3/4-inch-high oval and place side by side in 8x8x2-inch baking pan. Spread remaining can of chili sauce over meat loaves, dividing equally. (Can be prepared 2 hours ahead. Cover; refrigerate.)
Preheat oven to 450°F. Bake meat loaves uncovered until juices run clear when centers are pierced with small sharp knife, about 20 minutes.

i just use beef, eggs, bread, ketchup, and a mixture of butter, minced onions and garlic, sauteed into a buttery onion garlic sauce. then i bake it long enough to get it really firm, then i put it in the fridge, slice it, put it in between slices of bakery bread with some spicy mustard, shredded lettuce, and mayo, and eat it. meatloaf makes better sandwiches then anything else.

I personally roll the beef out on the cutting board over a layer of plastic, salt pepper, AND THEN add pickles ketchup mustard woistershire, rosemary and a little pinch of cayenne chopped onions then roll it up like a big ole meat joint and pop that bitch in the oven (roll it like sushi so the plastic isnt inside it!)
