Talking Indian Curry

I made this tonight: http://www.videojug.com/film/how-to-...in-ten-minutes

Highly recommended; it's definitely among the best meals I've ever cooked. I subsituted plain yogurt for the double cream, but I stuck to the recipe as far as everything else.

To summarize it: Get curry paste, cumin, ground coriander, and turmeric. Cut up an onion, a green chili, and a big chicken breast, and fry it in a pan. Once the chicken is mostly cooked, add the coriander, cumin, and turmeric (about 1/4 to 1/2 teaspoon of each), cook for a minute or so, add a big teaspoon of tomato paste, and then add a big teaspoon of curry paste. Add some double cream (again, I used yogurt, though I might try heavy whipping cream next time; double cream is hard to find in North America), cook for another minute or so, and it's done.

I had some of the chicken left-over, and I think tomorrow I'll cook up some of this frozen Asian vegetable mix I have. I should only have to add the spices and pastes, so I reckon it'll be really quick. I'll update with how it turns out.

The spices cost a total of around 12 bucks, but you can make tons of this with it...so, it's awesome. Next I need to figure out some good Chinese food recipes and I'll be able to permanently replace takeout.

Indian cuisine is very, very good. I wasn't aware it was all that popular in the states? It's a bloody staple over here!

You gotta have something sweet in curry. I put in either mango chunks, apple chunks or raisins.

And way more veggies in there.

Curry is my favorite thing in the whole world. I make mine with coconut milk instead though.

Ah, yeah. Some of the recipes I looked at included coconut milk and fruit. I didn't mind the lack of fruit, though I'll try it next time.

What are the key differences between a Indian curry and a Thai curry? I LOVE Thai curries with some coconut rice and roti bread. Yummm!
