this is my first post in this forum but i have been lurking for quite a while. yesterday i got a call from my boss asking if i would like to run the kitchen instead of just being the lead. of course i accepted. im excited but kind of nervous. anyone here have any experience running a kitchen? my best friend is a chef and i have already picked his brain, but im looking for any advice i can get.
