Cheese does not get old, only more tasty....
unless it's dried out maybe. But I'm tired of people telling me that my cheese expired a week ago and that I should throw it out. I've never got sick from eating "bad" cheese before, so why do they even have expiration dates on it? This is for deli cheese by the way, not the prepackaged stuff.

Whenever someone tells me that a piece of cheese may be 'iffy', I remind them that said food item is in fact the fermented coagulated solid fraction of a particular variety of cow(/sheep/goat/water buffalo) sweat.
It tends to shut them up reasonably quickly.
