Cheese
I've been on a protein binge lately and I've discovered something new about myself... I fucking love cheese. Mild cheese, strong cheese, fresh cheese, aged cheese, moldy cheese. It's all good to me. It's really the ultimate processed snack food. When it comes to manufactured food (ie not straight from a plant or off the bones of an animal) it can't be beat.
Now recommend me some good cheeses.
I'll start with jalapeno jack. Not very sophisticated, but interesting taste none the less. I'm not sure if it's popular outside of the southwest.

when did you become a mod?
anyway, im not too knowledgable when it comes to cheeses, but i do find that it is well worth spending the money for on fresh cheese rather than the stuff you get pre grated etc. this is especially true for fresh "snowman" mozzerella
it also depends on the dish. obviously a sharp, strong cheese would be used for something like a pasta dish, something light like a white sauce would do well with a something soft
also, i often just like snacking on crackers with ricotta on them and some olives

Well, some cheeses would be extremely hard to get fresh in the United States. One kind I really want to try is feta. The Greeks seem obsessed with it so it must be good.

I used to put baby boccaccini on just about anything. I love soft mild cheeses. Melted. On everything. I'm also a huge feta fan, specifically goats milk feta, it's not so salty, mostly creamy and nice.
Lately I've been throwing veggie cheese on everything, veggie cheese not actually being cheese but a weird soy mash-up made to taste vaguely like cheese. It comes in cheese slices so it's good on lots of stuff in a rush, and doesn't taste half bad.

i like about any cheese too.
i like to get a loaf of italian bread, put a shitload of really, really good thick sliced cured deli ham, add sliced tomatoes and cucumbers, then put mayo on the bottom and a shitload of really good bleu cheese on top. press it nice and flat, and holy fuck it's a mouthgasm.
and some kaiser rolls with cold sliced roast beef on it, a ton of pepper jack cheese, and some hellmans ancho chipotle sandwich sauce on the bottom.
or some thin sliced turkey on french bread with thick, sharp swiss, shredded lettuce, mayo, the spiciest mustard money can buy, and sliced tomatoes all packed in there.
or some shredded cold chicken breast with tomatoes, thick provolone, and some horseradish sauce on nice thick soft wheat bread.
fuck i'm hungry... i'm out of money and i haven't eaten for 2 days now...

Camembert is a good soft cheese, good w/ red wine, something like brie cheese.
I'm a fan of provolone in sandwiches, I'd say it's my favourite cheese overall.
