Hacking the sauce.
Well, I do weird things when I cook on the grill, especially when it comes to sauces. I customize it and it tastes damn good.
I take 2 regular hunts BBQ sauce and empty them in a bowl, I then press a few cloves of garlic into it, add some chili sauce I get from the Asian store, cayenne pepper and then a bit of soy sauce. When the chicken or ribs are done I put them in a foil packet and empty the sauce into it and throw it back on the grill for awhile.
I have also successfully made it from scratch.(Minus the hunts)
Do you guys make your own sauces or add to store bought ones? Im going to make some homemade alfredo sauce today and see how it comes out.
Im looking for some ideas as well.

Re: Hacking the sauce.
my girlfriend makes a mean bbq sauce, but hasn't let me in on the secret. goes deliciously well with ribs...
i tend to make my own tomato sauces, rather than buy a store bought one. or, kinda like you and spice up an italian deli sauce..

Re: Hacking the sauce.
Some of the best flavours can be found with homemade sauces, marinades, and rubs. Making them up takes some time, but it's usually worth it.
That being said, there are some wonderful things that you can pull out of a bottle or jar.

When it comes to meat my favorite think to do is make a soy sauce brine, makes everything yummy.

Re: Hacking the sauce.
Nothing weird about adding things to ready made sauces.
Though, personally I find that making sauces from scratch gives you a MUCH better sauce.
The best sauces for steaks and the like are ALWAYS pan sauces made right after the steak is done cooking.
You can make a brilliant pan sauce with just what's left in a pan after sauteeing, wine, broth, salt, pepper, and whatever you want to use to thicken it. Though to quicken the process, and deglaze the pan I like to use cognac, or tawny port instead of wi ne.

Port is fantastic. Love that stuff.
Any decent suggestions sambob? I'm guessing you've tried a wide range.

Re: Hacking the sauce.
I make a good Alfredo sauce; my brother, who went to some kind of cooking school taught me how to make it. I don't make it often, though, because cheese has gotten so damn expensive lately.

I'm not above using store bought sauces. I tend to use a lot of dressings when cooking meats.

Store bought sauces are alright. I like making my own sauce because I can make it come out exactly like I want.
I am going to go to the store and experiment on my BBQ sauce. Im gonna try a different brand chili sauce or maybe grind up my own.
I have also perfected a good brisket crock pot sauce.
