Your Perfect Fries?
Fries, chips, umm... fries, err... chips.
Whatever you call them, they're great. But how do you like yours? Some people like them thin, some thick, some super crispy, some nice and soft. With sauce? Without sauce? Gravy? Cheese? Chilli?What are your favourite ways of serving up this greasy staple of fine eatin'?
I like mine the good old canadian way (Poutine) or smothered with some fine chilli and some cheese.

they have to be hot. as in, just out of the fryer. i like them sort of thick, yet crispy so its not drooping and has a crisp shell. . and the seasoning should be chicken salt and/or hot paprika
edit: being an australia, we pretty much never hear of poutine. the closest thing we have is KFC chips dipped in gravy.
with this being said, is there a substitute for cheese curds?

Grated cheese? mozzarella? Canuks would say that's not technically putine if you don't use curds, but fuck 'em.

I'm not an expert in chips, I usually make them in a pan, cut the potatoes real thin and then fry them in olive oil with a hint of chili.
I like having melted cheese on them, something like Stilton, Roquefort or Gorgonzola.

My perfect fries:
Not thick and not thin, but crispy on the outside and fluffy on the inside. It has to have that amazing seasoning like Checkers fries.
There will be dips of Ketchup, Ranch, and Arby's 3 pepper sauce for the dipping.

Curly fries are easily the best of the best. Those, plain are soo good.
I also like nice thick fries, crispy on the outside, dipped in mayo. So rich and good.

Poutine conquers all.
However, I do enjoy the fast food chips provided by Rally's and Penn Station. The latter fries 'em in peanut oil, not sure how Rally's makes theirs.

Cavendish french fries are the best; it's a type of potato. I know that they're grown in P.E.I., so that province is good for more than just Anne of Green Gables.
You can check your grocery store to see if they're sold frozen; I know that they're sold frozen in Eastern Canada, but I haven't been able to find them out west.
I grew up eating fries and gravy on a regular basis. It's a favourite, but I've never tried chili fries or cheese fries.
