You really have 1 of two options

1. Tell her before you are 'dating' her and risk not even getting a shot because she thinks you are a low life scumbag.

2. Just don't tell her and wait until she busts you and explain it then. She's probably more likey to forgive you if she 'loves' you. Although if this does happen I would suggest that you possibly not tell her you have been doing this for year or whatever, might cause more trouble than its worth.

This is probably one of the things you don't want to tell her unless you really need too. I don't know her personality,only you do, but most women wouldn't be thrilled if they found out their man is a petty thief. Not too much security in that profession. You keep some secrets from her and she keeps some from you. Everyone's happy. If you truly want honesty, don't ask questions you don't really want the answer to.
