I tend to do mine like normal tea. I put the ground matter into a teabag or cheesecloth and slowly bring the water just shy of a simmer, maybe 200F. Takes on that grassy taste which I don't find particularly bad, but I've never gotten a bitter tannin flavor. I can't speak to the chemistry aspects of it, but it does the job.
