going for the whole ship in US waters is suicide. You need to find either a bottleneck area or get onto the ship in open water (preferably when it is stopped or moving slowly). Then you'd need to board the ship, these things are high off the water, that's a problem, you'd need to scale up the side (still with some degree of stealth unless the ship essentially paralyzed in which case you'd need to be able to service it). Afterward you'd need to subdue the crew for a while and gain access to the cargo you need and make a clean getaway. An alternative would be to pilot the ship to a friendly shipyard, get rid of the crew (peacefully or violently, in port or at sea), have the ship repainted, renamed and re registered or just sell it for scrap. You could do whatever you wanted with the cargo.

He wants the cargo I assume, not the ship. Just try registering a repainted ship after you jack it. Hide it in your back yard for at least a few months.
