Well, to be honest, if you're new to GNU/Linux enough that you feel you should use a Ubuntu, you probably shouldn't be running a server, that's just a straight path into getting owned. If that's the case, then try Ubuntu Server and hope for the best.
Outside of that, I'd recommend Gentoo or Debian.
Your fileserver might be faster with FreeBSD or OpenBSD, though. That's a _bit_ of a jump in at the deep end for someone totally new, but you'll be able to get the learning curve and eventually have a blazing fast fileserver.
Remember, format your discs with a fast filesystem. If you have a UPS go with XFS, if not (or if you have lots of small files, like pictures or music) use ReiserFS. Also remember that you can symlink
everything.
