I saw this girl at my friends bday party and its been a week now. I asked my friend about her and he called her and told her that I thought said was cute and wanted her number (they were already casually talking). She said she thought I was cute too and had interest in me. She said she'd go out to eat with me but she didn't know if she want a bf. She doesn't look like the type that will put out on the first date either. Is she just sayin that cause she doesn't wanna sound too easy for me to get or why she say that?

You can't really know, but eating with her is the perfect opportunity to jump her with questions. If you talk about it, she'll obviously either say "Okay, fine. I want a boyfriend" or "Yeah, well, my last boyfriend raped me" (Feel free to change the words around a little bit, I'm sure you know what I'm getting at..)

Regardless, go eat with her.
