They don't require refrigeration in the true sense. I remember my grandmother putting eggs in a clay pot at the bottom of her pantry shelf, covered in a wet cloth. They would stay good for quite sometime. But those eggs were ultra-fresh... coming from our own hens that we had in our farm.

In these modern times of fertilizers, crowded chicken coups, and hormone tainted chicken feed... the product (eggs) has become highly commercialized. Salmonella is a real threat, and considering the distances the eggs have to travel (farm -> distributor -> grocery store -> your house) it is a safe practice to refrigerate eggs. Again, it's all about quality and shelf life. Refrigeration helps to increase both.

^^ I believe the OP feels that the FDA regulations are not in true synchronization with food-related practices elsewhere in the world. Maybe he is a non-conformist seeking ways to differ from the general public. I just happened to attempt to explain, WHY the FDA recommends refrigeration of eggs in the USA.

Bottomline: Nothing to get so worked up about here. As a consumer, we are entitled to ask away about our concerns. Smile

I believe it's to make them last longer. I dunno what it's like there but here in Australia people will buy eggs from the normal shelf and when you get home into the fridge.

How long do you think eggs would stay in the open environment in a farm?

Eggs confuse me

People are told not to eat them raw because of a risk of salmonella (??) but you hear all about people drinking raw eggs in their exercise regime, and when people make cakes with eggs and eat the batter....that's right. Eating a batter that has raw egg in it.

I'd always wondered why you buy eggs on a room temp shelf in the shops, then go home and put them in the fridge.

In japan they eat basically raw egg. Just heated in water for like one minute.
