Count Dooku "floats" down from a high ledge in Clone Wars, which was made by Lucas Film and therefore its part of the official story.
However I'm pretty sure making something else move via telekinesis, is probably different than making yourself fly.
However Lucas has said in interviews (regarding Episodes 7-9), that Jedi can fly. I dont remember where I read it exactly, but he was talkinga bout Episodse 7-9 saying that he had some things done for them, ideas, talking about how powerful Luke becomes.
And making people fly up off the ground is just pushing them via telekinesis and holding them there. Count Dooku does it specifically in Episode 3 during the duel in the opening scenes.
Jedi do often jump very far, but this is using the force to boost their muscles I think.
Also in Episode I the scene you are referring to I assume is at the end when Obi Wan 'flies' out of that bottomless pit to kill Darth Maul. Obi-Wan wasn't using the force for levitation or anything like that, once again he just used it to increase his physical abilities. He used his ARMS to pull him up, and with much improved strength, he was able to "jump" with his arms a great distance.
I'm pretty sure flying is a very difficult thing to do. Jedi are able to jump incredibly distances and do great feats of acrobatics because of their increased PHYSICAL abilities, like how Yoda fights. He isn't levitating using the force, he's jumping and using his physical abilities with the help of the force. thoug there are times in Episode II where it seems like he's "jumping" off of a surface in thin air, but this is more likely just the effects shot not eing 100% clear in Yoda landing some place. If that makes sense.
