Perhaps laugh it up. Or even better, explain what you mean. Say that when you say you love, you mean you can't see anything wrong with them, or some looming terminating factor.

That happened to me, but in reverse.
My girl started saying it at about the two week mark when she was saying goodbye and stuff... I didn't really wanna say it back at that point, which led to some awkard silences, etc, you get the point.

I got around the awkardness/annoyance of it, by saying it in spanish!
I like spanish, so much cooler than english...

that happend to me once. i had just finished fucking this chick i'd been going out with for about a week, and for some reason i said "i love you" while holding her tender body in my arms. she looked like she had just seen a ghost and said "what did you say?" I thought about saying something else but decided to go with it. turns out we had a really good relationship, but still a really awkward moment.
