Well, this is the website we use for class:
http://taj.chass.ncsu.edu/
It's pretty good. It has videos so you can practice listening and it'll give you some basic vocabulary. And a lot of grammar.

This is a decent online dictionary.
A good Hindi grammar book is Introduction to Hindi Grammar by Jain.
Once you get good enough, you'll want to start reading. But there seems to be a lack of Hindi books at local libraries, so try Wikipedia articles! If you look up something common like "Islam" or "Jesus", they'll have articles about that in Hindi and you can start reading and translating. They sadly don't yet have a Hindi article about feces, but maybe soon.
Good luck! It's not a terribly useful language because a lot of Hindi speakers have learned English, but it's really pretty and the script is fun. Plus, if you learn Hindi, you know how to speak Urdu. And once you've learned the Urdu script, you can write in Arabic. Which is kind of a cool chain.
