Acetic anhydride cannot be made simply by removing the water from acetic acid.

There are many ways of making it starting with acetic acid. The two I can think of off the top of my head are by reacting ketene gas with acetic acid and by reacting acetyl chloride with sodium acetate.

Unfortunately the ketene method although easy requires the manufacture of a tricky device (the ketene lamp), some nichrome wire, and a variac. Plus ketene is a deadly poison gas that will kill you in a breath.

Do not try the above.

The other method is relatively easy but requires phosphorus trichloride or some other selective chlorination agent used for making acyl chlorides. Sodium acetate is made as easily as mixing vinegar and baking soda. The final reaction is easy as well.

However a glass distillation apparatus is needed for either method, make that a distillation apparatus with drying tubes foir moisture protection.
