Do something DIFFERENT to what she might expect. How about HER doing the booking/organising for whatever celebration you're going to have, that would be different.

We went to a musical & dinner and I got a very lovely diamond ring. That was good.

What I did was I spent a couple months writing and shooting a short film about when we first met (one of those sparks fly, instant connection moments which makes the inevitable break up 2 years later all the more special...sorry got side tracked), it was about 20 minutes long, and we (me and my friend's indie film crew + cast) shot it on 35mm film.

The big day rolls around, I pick her up from her house, we go out to eat at a nice restaurant, then told her we were going to go see a movie. Kind of bummed her out because she thought it was unoriginal just going to a movie, but low and behold, film friend also is a manager at the theatre we go to. Allowed me to have an entire auditorium to ourselves and to play my movie I made for her. Then when it was over, I gave her the original screenplay, and the film reels.
